Now that I'm eating salads with lunch and dinner, I have found that chopping up my veggies for the week and storing them in airtight containers makes salad prep SO much easier and FASTER! Buy Grape of Cherry Tomatoes that you can just toss onto your greens. Zucchini, Squash, and Carrots will all stay fresh when chopped for at least 5-7 days, and are great ways to boost your veggie intake!
